Abs are Made in the Kitchen

As the old saying goes, "abs are made in the kitchen". So today I'm featuring one of my favorite recipes that couldn't possibly be any healthier or loaded with more protein. Try this and you'll love it!

Step one: Take a pound of raw, peeled and deveined shrimp and chop into small pieces. I usually use 16 to 20 count shrimp and cut them into three pieces, but anything will work. Furthermore, I eat mine with chips and that's the only reason I cut it up. Add one small to medium red snapper filet chopped the same way. Orange roughy works fine too. Put this all in a medium sized mixing bowl and squeeze the juice of one fresh lime and one fresh lemon over it. Cover and refridgerate for one hour, mixing periodically to make sure it all gets coated. Remember, it is the acid in the juice that is cooking the fish.

Step two: Chop / mince one half of a medium sized red onion, a whole medium sized tomato (cherry tomatoes work well because they're loaded with flavor), one whole avocado, one whole mango and a bunch of cilantro.

Step three: After an hour, drain the juice and fish stock that has accumulated in the shrimp / fish bowl. Then add all the other ingredients and cover with the juice of another lime and lemon. Put back in the fridge for another hour, mixing periodically.

Step four: Add 1/2 cup of orange juice, 1/4 cup of Frank's Original Red Hot and salt to taste.

Finally, eat with a good hardy tortilla chip. Or for an even healthier twist, black bean chips. Great addition to your boxing and mma workouts.
